Grape variety: 100% Nero d’Avola
Production area: Central -South Sicily Agrigento – Caltanissetta (between Valle dei Templi and Colli Nisseni).
Training system: Vertical trellis, implanted on varied land mostly clay and limestone.
Vinification: Pressing and soft destalking, with controller- temperature fermentation about 25°C in stainless steel tanks; fermentation period 15 days.
Ageing: Maturated in stainless steel, it is aged for 3 months in bottle.
Alcohol by volume: 12,50 % vol.
Food matches: It accompanies Italian hors d’oeuvre, pasta and generally by the Mediterranean cousine.
Capacity: 75 cl bottle – 150 cl bottle.
