Grapes: Native white grapes, harvested when they reach the right sugar-acidity balance.
Vinification: The grapes after having been de-stemmed and cooled down to around 8°C, they are immediately pressed with soft pressing, the first fraction obtained must is the place to decant for about 36 hours and then selected yeast is added, the fermentation temperature is kept low between 10° and 12° C, so as to have a slow fermentation and long maturation in stainless steel containers at low temperature to preserve scents and fragrances lasts about 6 months.
Tasting
Colour: Pale straw yellow.
Smell: Hints of acacia flowers and wisteria well harmonized with a delicate hint of honey.
Taste: Fresh and pleasant, thanks to the right balance between sugars and acidity that make it long and persistent.
